Peppermint Kiss Cookies


I followed this recipe to a T.  I wanted to dress them up a little bit so once I took them out of the oven I placed a single peppermint Hershey kiss on top and let them cool completely.  They are delicious and I will definitely be making these again.

Turtle Cookies


Ok so this recipe says it makes 24 but I'm just saying that they are VERY small.  I would say that if you double it it would yield 24 nice normal cookies.  They are yummy but would be better if they were larger.

Peanut Butter Fudge


Yummy!  This turned out very well!  It tastes amazing especially if you freeze them and then eat!

Chocolate Espresso Cookies



I doubled this recipe and ended up with 43 cookies.  I thought the dough to be very soft and hard to manage.  This is a one year only cookie I'm making.

Also I couldn't find instant espresso so I ended up using instant regular coffee instead.

Grandma Pie

Secret recipe from my Grandma Scott...yummy!
Made one raspberry and one blackberry for Thanksgiving!   I also used the pie crust from scratch recipe I already posted.

Mexican Dip

1 can of Hormel chili no beans
1 large can of corn drained
4 oz velveeta cubed

Combine all together. Microwave 5 minutes, stirring half way. Serve hot with chips.

Buffalo Chicken Dip

Ok so I combined:
2 - 8 oz packages of softened cream cheese
1 Cup of Ranch
1 Cup Tabasco
1/2 Cup Blue Cheese
2/3 Cup Shredded Mozzarella
2 Rotisserie Chickens, then blend meat in a blender so smaller pieces

I combined the first five ingredients and made a creamy sauce.  Then I combined the chicken.  I cooked mine for 40 minutes and then heated it up in the oven on warm for 1 hour.  It makes A LOT of dip like 8 cups (which is great for a party). Serve with tortilla chips.

Turkey Shephard's Pie

16 oz turkey breast, cubed
8 oz frozen peas
8 oz frozen carrots
18 oz jar or turkey gravy (it might have been 16 not sure, whatever the biggest jar at GE was)
1 tsp of thyme
1 pkg of bob evans premade mashed potatoes

In my 4 qt crock pot, add peas and carrots, then place turkey breast, then I poured the gravy on top, lastly I sprinkled the thyme on.  Cook on low for 6-8 hrs, stirring occasionally.  1 hr before serving put spoonfuls of mashed potatoes on top.  Serve hot.

I made this after for my parents after surgery this week.  Its super yummy and soft on throats.

Crispy Ranch Chicken


1/4 cup of unseasoned bread crumbs
1 packet (1 ounce) Hidden Valley Original Dry Ranch Dip Mix
4 boneless chicken breasts
 
Combine bread crumbs and dry ranch in a plastic bag.  Add chicken breasts one at a time and shake till the chicken is coated.  after you have done all the chicken breasts I usually shake the remainder of what'sleft in the bag onto the chicken.  Bake chicken uncovered, in an ungreased baking pan at 375 degrees for 50 minutes.

I cut everything in half and made 2 chicken breasts.  It was yummy!

Egg Salad Sandwhich

Here is the recipe I used for my inspiration.

Now I am not a mayo fan, in fact I would venture to say that I HATE IT.  But I love egg salad so I decided to try this.  I made a few changes b/c if it is runny or has any mayo chunks I will just loose it all over my kitchen.
So I used:
6 eggs
3 tsp miracle whip
1/4 tsp Dijon mustard
1 Tb dried chives
salt and pepper to taste
Crush eggs with fork, add rest of ingredients and mix thoroughly. I eat mine on wheat bread usually toasted.

Cheesy Broccoli Chicken Foil Packs

Now I didn't have cheddar cheese so I used about 1 ounce of Velveeta in each packet cut into little cubes.  Also, I cut all the fat off my chicken before placing them in the oven...I HATE FAT!
Instead of using fresh bacon I just bought the already crushed stuff in the store and used that (also good on english muffin pizzas).

Thus was amazing and smelled awesome!

Left Over Pie

I used my left overs from last nights dinner.

I shredded the left over roast beef and threw out all fat.  Cut Carrots into bite size pieces.  Combine shredded beef and carrots with left over gravy in a small casserole dish.  Spread left over mashed potatoes on top of everything.  Put shredded cheddar cheese on top.

Bake at 350 for 1 hour.

DIY Jewelry Cleaner

Boiling water and 1 tbsp of dawn dish soap. Combine. throw in jewelry. Scrub with a toothbrush when water is warm. Once water is cool...rinse jewelry off in warm tap water. Let dry over night. Put on in the morning. My ring came out like at the jewelry store :0)

Healthy General Tso's Chicken

2 tsp. cornstarch
3 tbsp. soy sauce
2 tsp. olive oil
3 tbsp. rice vinegar
3 tbsp. water
1.5 tsp. ground ginger
1.5 tsp. minced garlic
1 tsp. chili powder
1 tsp. paprika
3 tbsp. water
1/2 c. sugar

In a bowl, whisk together the first 9 ingredients. Set aside.

In a large saucepan, bring 3 tbsp. water and sugar to a boil. Don't stir! Cook until the mixture turns golden. Add the oil/vinegar/spice mixture. Simmer until the caramel has dissolved and has become syrupy. My hubby ended up stirring it when we added the spice mixture.

Place whatever chicken you have pre cooked into the sauce and toss to coat. Serve hot!

Baked Salmon

Tin Foil
2 Salmon Fillets
1 lemon, sliced
butter
pepper

Lemon sliced first, salmon on top, add butter on salmon and top everything with pepper. Wrap in a foil envelope, cook 25 mins at 300.

I just added everything into a ziploc baggie and then let it marinade for overnight.

I didn't use fresh garlic or cilantro or lime.
2.5 tsp crushed garlic
2 Tbs dried cilantro
4 Tbs lime juice
