Pickled Eggs

6-8 hard boiled eggs, shelled & rinsed
2 cans sliced beets
1/2 cup white vinegar
1/2 cup sugar

Mix all together and let sit for 4 days so that the eggs soak up the beet juice.  When they are ready the entire white part of the egg will be pink.

I eat mine with salt!  YUMMY!

Moving Forward Present

My friend recently got a new job in New Hampshire and is moving mid May.  I'm so proud of her and excited BUT I'm going to miss her horribly!  So I put together a little fun package of little things to remind her of the fun times we've had!

I found this Paris Box Purse and filled it full of mementos.

There is a Panda to represent our sisterhood Sigma Delta Phi. K-Cups because we always talk life over coffee. A sushi magnet that says "Just Roll With It" and some neat chop sticks for her new place to represent our Sushi dates. I found this awesome book full of little funny shoe sayings to make her smile b/c her passion is SHOES. I also found a mini spa kit for her to enjoy some relaxation after her move.  Oh, and I didn't forget her Pup, he has a tug rope toy.

Miss our monthly dates...can't wait to visit her in NH!

Baby Grandma Salad Dressing

My Grandma made this dressing for salad every holiday :0)
She did it by memory and taste...but I measured it out for all of you!

1/4 C White Vinegar
1/4 C Vegetable or Canola Oil
1 t onion salt
1.5 t garlic salt
20 cranks of pepper

Mix all together with hands on salad.

My salad above has baby spinach, arugula, cucumber, carrots, green olives, banana peppers, and shredded cheddar cheese.  This is great dressing for people with preservative allergies, dye allergies, and diabetics!

3-2-1 Cake

This is super easy to make and it is great for portion control. Kevin found it on
Mix 1 box of your choice of cake mix and 1 box of angel food cake in a zip lock baggie. (for mine I used devils food cake to get my chocolate fix)
Then in a small bowl mix 3 T of cake mixture and 2 T of water.  Microwave for 1 minute. Then you have a mini cake :0)
For mine I doubled it in a soup bowl and put a 1/2 C of raspberries on was SUPER yummy!

Craft Basket Organization Continued...

My sister bought me Tazo Green Tea from Starbucks.  It was sooo good and the tin is great  upcycled for a container for puffy paint.
I had a container of powder for Gatorade that I finished.  It is awesome for a container for buttons/beads. It also  is great for ribbon spools!

Kate Spade EAT Shit ;0)

Kevin bought me a simple touch nook yesterday and we were looking at covers...the least expensive one was $20 and OF COURSE my favorite one was Kate Spade at $80!!!!  So I decided to go on Pinterest and find a DIY project.

Here is the Tutorial I followed to make the cover.  I added the pocket, elastic holders, and light holder :0)  Kevin and I had fun with this AND all for under $10!

Nook Cover # 3 Inside with pocket
Nook Cover # 3 Skull embellishment
Nook Cover # 1 Front
Nook Cover # 1 Back
Nook Cover # 1 Open...You can see the pocket on the left.
Nook Cover # 1 I used elastic on the four corners so it would keep the nook safe and secure all the time.
Nook Cover # 1 I sliced a small hole in the inside cover and then attached ribbon on the outside of it to make it decorative.  I only had a kindle light so that's why I did this.
