Chocolate Zucchini Bread

2 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1 teaspoon baking soda
2 teaspoon cinnamon
1/4 teaspoon baking powder
2 cups sugar
4 egg whites
1/3 cup canola oil
2 Tablespoons water
2 Tablespoon pure vanilla extract
2 1/2 cups zucchini, shredded

Preheat oven to 350 degrees F. Grease two 4x8 inch
loaf pans with shortening. Whisk next 5 ingredients
together in a bowl. Combine next 5 ingredients in
another bowl. Beat with an electric mixer or whisk until well blended. Stir in zucchini. Add dry ingredients and
stir just until moistened. Divide batter equally between pans. Bake 60 minutes, or until toothpick inserted near center of each loaf comes out clean. Cool loaves in pans for 10 minutes. Remove loaves from pans and let cool completely on aluminum foil. These can also be made as muffins; I suggest greasing the muffin tin rather than using paper cups, since the muffins tend to stick to paper.

Strawberry Mixed Greens with Strawberry Dressing

I'm on a Low Iodine Diet for the next 12 days so I will be posting some recipes that have no salt.  All of this is in order to prepare myself for radiation on May 31st.

REVIEW:  I actually really liked this!  It is even something I would make again if I wasn't on  a low iodine diet.

1 1/2   cups sliced strawberries, divided
4         cups mixed greens
1/4      cup sliced almonds, lightly toasted
1/4      cup olive oil
1 1/2  Tablespoon balsamic vinegar
1        Tablespoon sugar

Mash enough berries to measure 1/8 cup.  Reserve remaining berries.  Whisk together oil, vinegar and sugar to blend.  Stir in mashed berries.  Use as dressing for the above salad ingredients.  Mix it all in a bowl and serve.  Salad dressing does not keep well.  Must be used right away.

Salad with Grilled chicken No seasoning

DIY Orange Vinegar

8 oz. of white vinegar
1 orange peel

Combine above in a bowl and let sit for two weeks.
Strain out all orange pieces.
Add 4 oz of the orange vinegar to 4 oz of hot water in a squirt bottle.

I use this for counters in the bathroom/kitchen and kitchen table.

DIY Bird Bath

Bird Bath Instructions...

Kevin and I made this for my Mommy for Mother's Day!

We did it a little differently then the lady in the above instructions.

1. I painted the my 12", 10", and 8" terracotta pots blue. I painted the 16" saucer yellow EXCEPT for the inside.

2. I glued the terracotta pots on top of each other. Then I painted my design on them.

3. We then sprayed the entire exposed surfaces with sealer 3 times!

4.  Glue the saucer on top of the terracotta pots.
