Healthy General Tso's Chicken

2 tsp. cornstarch
3 tbsp. soy sauce
2 tsp. olive oil
3 tbsp. rice vinegar
3 tbsp. water
1.5 tsp. ground ginger
1.5 tsp. minced garlic
1 tsp. chili powder
1 tsp. paprika
3 tbsp. water
1/2 c. sugar

In a bowl, whisk together the first 9 ingredients. Set aside.

In a large saucepan, bring 3 tbsp. water and sugar to a boil. Don't stir! Cook until the mixture turns golden. Add the oil/vinegar/spice mixture. Simmer until the caramel has dissolved and has become syrupy. My hubby ended up stirring it when we added the spice mixture.

Place whatever chicken you have pre cooked into the sauce and toss to coat. Serve hot!
