Lemon Filled Lemon Cupcakes

I mixed a white cake mix but I used 3 eggs not 3 egg whites.  I added the zest of one lemon and 1 tsp of lemon extract to the cake mix.  I then baked the cupcakes as usual.

While the cupcakes were cooling, I made up the lemon pudding. One it was set completely I added lemon zest of one lemon mixing thoroughly.

Once the cupcakes were cooled, I used the tool I bought a BB&B to remove the centers.  I put the lemon filling in and put the cupcakes in the refrigerator.

These are yummy and of my own creation for my Mama for Mother's Day.

Breakfast is the most important meal of the day...we ate it for dinner :0)

Kevin made waffles with bisquick topped with strawberries and organic syrup.

Mixed Berry Salad

Made this for Mothers Day tomorrow.

Mixture of strawberries, blueberries, raspberries, and blackberries!

Put a papertowel on top with the lid and it will absorb any moisture and keep the berries fresh.

Tung Oiled My Grandpa's Chair

Before and After pics :0) I was really happy with how the tung oil bright the grain out of the wood.  Such a beautiful natural coloring too!

Anti-Pasta Salad

My family has turned a new leaf and we are trying no processed foods.  NO PASTA.  So this is a creation I made for the Anti-Pasta people.  Its basically pasta salad but you substitute lettuce for the pasta.

4 oz pepperoni, cubed
4 oz hard salami, cubed
3 oz mozzarella, cubed
3 oz cheddar, cubed
1/2 jar of banana peppers
1 small red onion, bite size pieces
3 heads of romaine lettuce, cut up
1/3 container of Kraft light Italian dressing

Combine all of the above EXCEPT lettuce.  When ready to eat, put lettuce on plate and then top with mixture.  I like to keep the lettuce separate so I can eat this a couple nights.  I HATE soggy lettuce!!!

Thaw chicken breasts, marinate in Italian chicken for minimum of four hours, grill, eat...we were too hungry to take a picture apparently :0)
