Lemon Filled Lemon Cupcakes

I mixed a white cake mix but I used 3 eggs not 3 egg whites.  I added the zest of one lemon and 1 tsp of lemon extract to the cake mix.  I then baked the cupcakes as usual.

While the cupcakes were cooling, I made up the lemon pudding. One it was set completely I added lemon zest of one lemon mixing thoroughly.

Once the cupcakes were cooled, I used the tool I bought a BB&B to remove the centers.  I put the lemon filling in and put the cupcakes in the refrigerator.

These are yummy and of my own creation for my Mama for Mother's Day.
