1 small onion chopped fine
1 lime, zest and juice
1 tsp minced garlic
Combine the above in medium bowl. Let sit while you chop veggies for below.
4 Roma tomatoes, deseeded and chopped
1 yellow pepper, deseeded and chopped
1 jalapeno, deseeded and finely chopped
1 cup canned corn, drained and rinsed
1/2 cup black beans, drained and rinsed
1/4 cup cilantro
1 drizzle olive oil
Combine rest above into bowl. Stir well. Refrigerate until eaten. Serve with chips.
Its so good especially for picnics or summer dinner! If you like onions then cut the lime in half...of you want it sweet use the lime I listed.
