Easy Turkey Pot Pie

Thanks to my friend Erin for giving me this recipe/idea!  Such a nice fast easy recipe :0)  Not to mention a wonderful way to use up leftover turkey.

Put pre-made pie crust in pie pan.

In a separate bowl combine - 1 cup of cooked carrots, 1 cup of cooked peas, 2 cups of shredded leftover turkey, one small jar of turkey gravy. Put into pie crust.

Top with another pre-made pie crust.

Cook at 425 for 15 mins.

Serve with mashed potatoes and stuffing.

Love Me a Turkey Bag

I love Turkey Bags!!!  Clean up is so nice and fast not to mention the amazing turkey!

1. Remove neck and gizzards...clean turkey...pat dry.
2. Shake flour in turkey bag...brush melted butter on turkey...season with salt, pepper, garlic salt, and dried minced in bag and seal shut...slice top of bag.
3. Cook 16 pound turkey for 3 hours (we used a pop out turkey timer).
4. Eat Amazing Yummy Turkey :0)

Cream Cheese Icing on Mini Pumpkin Cupcakes

This was quick and easy way to make an AMAZING cream cheese icing!  We love cream cheese icing on mostly Pumpkin Cookies and Pumpkin Cake :0)

These pumpkin cupcakes are my favorite way to bake...EASY!  Just mix one small can of Libby's Pumpkin Puree and one box of dry yellow cake mix and bake at 350 for 15-20 minutes.

*also tried it with spice cake = amazing

Pumpkin Sheet Cake

1 box yellow cake mix
4 eggs
½ cup canola oil
½ cup milk
3.4 ounce box vanilla instant pudding mix
15 ounces pumpkin
1 stick butter, melted
¾ cup brown sugar
1 teaspoon cinnamon
1 cup powdered sugar
½ cup heavy cream
  1. Preheat oven to 350 degrees. Spray a rimmed baking sheet with cooking spray. Combine cake mix, eggs, vegetable oil, milk, pudding mix, and pumpkin in a large bowl. Spread batter into an even layer on baking sheet.
  2. In a small bowl, mix together butter, brown sugar, and cinnamon. Drizzle cinnamon mixture over batter.
  3. Bake for 35-40 minutes, or until edges are lightly browned. Whisk together powdered sugar and heavy cream. Drizzle icing over cake. Refrigerate.
