Happy New Years Eve :0)

Happy New Years Eve!  We had a wonderful spread this year!


James Bond Champagne ROCKS!

Loved the 5 layer Mexican dip.  I think in the future dips will be the must have staple in our home.

Again another staple in our home, you can't go wrong with a cheese, meat and cracker tray.

Review of Special Cuvee
Is a very beautiful gold color and tastes of a tart red apple. This Champagne is worth the money and a try after all it is James Bond approved.

5 Layer Mexican Dip

16 oz can refried beans
8 oz guacamole
8 oz sour cream
1 packet taco seasoning
8 oz salsa
Shredded cheddar cheese

In a 8 x 6 Pyrex, spread refried beans mixture (refried beans and 1/2 packet of taco seasoning) on bottom, then guacamole, then the sour cream mixture (mix sour cram and remaining 1/2 packet of taco seasoning together), then spread salsa, finally sprinkle top with cheddar cheese. Place in frig at least one hour before serving. Serve cold with tortilla chips.

Review of 2004 Grand Vintage
Smells of sweet grapes but tastes of tart grapes. Has a light golden yellow color. 
Not overly carbonated, just right.

  1. 1785 this Champagne was presented to Queen Marie Antoinette and she loved it so much that word spread around court which made this become popular.
  2. 1953 Marilyn Monroe stated that she went to bed every night with a drop of perfume and woke up every morning to Pipe-Heidsieck Champagne.
  3. Established in 1785
  4. The official supplier for the Cannes Film Festival since 1993
  5. Piper-Heidsieck does not own any of their own vineyards.  They get their grapes from 60 vineyards in the Champagne Grape Region.

Ever have a granny smith apple?
This smells and tastes like one!
At first this champagne is very bitey, but as you go on the taste seems to soften.

Review of Brut Premier
This champagne is a very beautiful light golden color and smells crisp.  Has tones of apple and is slightly tart.  Once open becomes very fizzy which makes it quite enjoyable with each sip.

Review of Yellow Label
As soon as it was opened it had a yeast smell to it.  It has a clear yellow appearance and bubbled exactly like the movies.  It has a smokey and pear taste.

2013 Cookie Fest

After 3 Days of baking, I pleased to announce that I have made 24 1/2 Dozen Cookies (295) and 3 lbs of fudge!

I will say that I am so thankful for my Hubby and Poodle who help me in the kitchen.  Also this year I had helpers for the cookie decorating :0)

I love making Christmas cookies because they are the best gifts to give to people I care about.  Not to mention that it is literally one of the few things I like about Christmas.

Lets see if next year I can hit 300 cookies!

Royal Icing

I loved this icing on my cut outs this year and it will be the staple for upcoming years!

4 Cups Powdered Sugar
2 Tbsp Meringue Powder
5 Tbsp Warm Water

Combine all and mix for 7 minutes until frosting is thick and makes peaks. Next year I might add 6 Tbsp of water b/c it was pretty thick.

That is it!  Super easy!  We added food coloring to make it festive.

This was my favorite cookie that my Hubby made me - Poodle wearing a Christmas Sweater! LOL

Sugar Cookies *TOP SECRET*

Secret Recipe Sugar Cookies...never gonna tell!  I will make sure it is in my will ;0)

Cut Out Cookies - No Refrigeration Required

I admit I was skeptical about cut outs that you don't need to refrigerate first but these are awesome!!!  Yummy and decently easy for cut outs.
It made 5 dozen.
We made some Christmas ones that we will frost and some star wars ones with sprinkles on them :0)

Italian Meatballs

1 lb Ground Meat
1 Egg
1/4 Cup of Milk
1/2 Cup Italian Seasoned Breadcrumbs
1/4 Cup of Parmesan Cheese

Combine all together.  Roll into golf ball sized meatballs.  Pour one jar of Ragu on top. Cook on high for 3 hours.

Serve with pasta or as meatball sandwiches.

These smelled amazing as they were cooking and they tasted even better!

Lady Locks

Shell:

1-3/4 Cup Flour
1 Tb + 1 tsp Sugar
1/4 Cup Crisco
1 Egg Yolk
1/2 to 2/3 Cup Warm Water

3/4 Cup of Crisco (do not add to dough, save for cutting in later)

Mix all the above, I used my hands.  Shape in a flat disc, wrap in cling wrap, place on a plate and pop into the fridge.

Every 1 hour, open the cling wrap, spread 1/4 cup of Crisco thick on top of dough, fold in half, pound flat, cover with cling wrap, and return to the fridge.  Repeat 2 more times (or until 3/4 cup of Crisco is used).

Leave set in fridge overnight or at least 12 hours.  Yes, the dough is not hard but it will be ok.

Preheat oven to 375 F.

The next day, roll out dough on a flour covered counter top (I also put flour on top and bottom of my dough and on the pin).  Take 1/4 and leave out and place the rest of the dough in the fridge.  Roll the 1/4 piece into between a 1/8" to 1/4" thickness.  Cut into strips 8 inches long and 1 inch wide.  Wind each strip around a steel rollers (Cannoli Rollers) and place on a cookie sheet with Pam on it.  Bake for 13-15 mins just enough so they set but are not brown.  Remove from oven and let cool for 10 minutes.  Carefully remove the shells from the steel rollers.  Place on paper towels to absorb any access oil.

Repeat until dough is gone.


Filling:

1/2 Cup Crisco
1 stick of butter, softened
2 Tbsp Cold Milk
6 Tbsp Granulated Sugar
1/2 Cup Flour
1 tsp Vanilla

Mix all the above together until combined and creamy.

Once shells are COMPLETELY cool, fill them up.  I use my icing tubes because it makes it easier.


This recipe made 27 cookies (I had enough filling for probably two more).

There is only one person in the world I will ever make these for...my sissy <3

Diabetic PB Cookies

1 cup Splenda
1-1/4 cup creamy PB
1 egg

Mix together.

Roll in one inch balls and then smash the top with a fork.

Cook 7 mins at 350.

Store in an air tight container in the frig.

Lemon Tea Cookies


This made me 38 cookies.

I find that the dough it to crumbly to work with when forming logs, so I add about 1 tsp of water to the dough before hand.

I made these last Christmas and they were a big hit.  I also made them for a wedding shower and again were so popular.  So this year I made them for Christmas as a request from my Mama.
