Shrimp Salad

1/2 Red onion, chopped
2 Limes, juice only
1 tsp Olive Oil

Combine above together. Let sit a min of five mins.

2 Roma tomatoes, seeds removed and chopped
1 Jalapeno, seeds removed and chopped
Shrimp, precooked and chopped
1 Avocado, choppped
Cilantro, chopped (around 1 Tbsp)

Combine all the above and the onion mixture.

I also added salt, pepper, garlic powder, and southwest chipotle seasoning to taste.

I served it cold with Rolls.
