Apple Pie Filling

15 apples, cored and peeled and chopped
3 Tbsp Lemon juice

Combine the above in a large bowl. Set aside.

6 cups water
4 cups sugar
1 cup corn starch
2 tsp cinnamon
1 tsp salt

Combine all in a large pot and bring to a boil. Boil for 2 mins stirring constantly. It will get thick.

Add apples to pot. On low heat, let simmer for 8-10 mins until apples are tender.

Scoop enough into a freezer ziploc bag to fill a pie pan.

This made 2 deep dish size pies and about 2 extra cups for ice cream topping.
