A beautifully crisp with unending bubbles. Has a apple smell with slight tart after taste.

Peanut Butter Puppy Cookies

2 cups flour
1-1/2  tsp baking powder
1/3 cup PB
1 cup milk
1 egg (optional)

Heat oven to 375.

Mix dry ingredients together first then add in wet ingredients.

Once dough is formed, roll out, cut with cookie cutters, place on a baking sheet lined with parchment paper. Bake for 20 minutes.

Once cool, refrigerate for up to 10 days.

2015 Cookie Fest

Over 6 days we made:
4 dozen peanut butter cup cookies
3-1/2 dozen Mexican hats
4 dozen brown sugar cookies
11-1/2 dozen cut out cookies
3 dozen Allie cookies
3 lbs peanut butter fudge

For a total of...
312 Cookies
26 Dozen

Pretty good for having a baby on my leg the whole time ;0)

Thank God for my early Christmas present...a kitchen aid mixer! Saved so much time and clean up. Where has this been all my life!

Broccoli Chicken Rice Casserole

1 can of cheddar cheese
1 can cream of chicken
1 cup chicken stock
2 bags frozen broccoli (about 24 oz)
Rotisserie chicken, shredded
1 servings of rice,  cooked

Mix soups and stock together.
Add in broccoli and chicken.
Mix in cooked rice. 
Put in a baking dish.  Sprinkle shredded cheddar cheese over top. Cover with foil.  Cook on 350 degrees about an hour (1-1/2 hours of broccoli is frozen) or until broccoli is cooked through. 
**note,  this is a doubled recipe. Cut everything by half of you don't want to make do much.  It'll be good frozen, and thawed again for another meal. **

Chicken Gnocchi Soup

This is basically a fancy chicken noodle soup with gnocchi instead of noodles. I left out the celery, did 1/4 tsp ground thyme and did 2 cups of carrots. Next time I'm going to try egg noodles instead of gnocchi.

Spinach Sausage Tortellini Soup

1 lb original sausage
2 tsp garlic paste
64 oz chicken broth
32 oz diced Italian seasoned tomatoes
1 package fresh baby spinach
1 bag cheese tortellini

Brown 1 tube of sausage. When almost done, add garlic. While that is cooking, add chicken broth and diced tomatoes in large pot. Bring to boil. Add the sausage when cooked thoroughly. Reduce heat and simmer 20 minutes. Add spinach and tortellini. Simmer an additional 20 minutes. Serve with grated Parmesan cheese on top and bread.

This recipe came from a friend of mine and we are in love with it!

Butternut Squash Soup

I didn't follow this recipe exactly. After I simmered it for 45 minutes, I took a hand potato masher and mashed the squash so the soup wasn't super chunky. Add 4 Tbsp milk, stir and let simmer for 15 more minutes. I seasoned with salt and pepper and served with bread.

Garlic Parmesan Spaghetti Squash

1 large spaghetti squash
Olive oil

Heat oven to 400. Line a baking sheet with foil and drizzle with olive oil. Cut squash in half, remove seeds, and place face down in oil on the baking sheet. Bake for 35-40 minutes until cooked through. Remove from oven and let cool for 10-15 minutes. Take a fork and shred squash (will look like spaghetti).

4 Tbsp butter
3 tsp garlic paste
1/2 cup Parmesan
2 tsp parsley

Melt butter in small pot. Add garlic paste until melted into butter. Remove from heat and pour over spaghetti squash. Add parmesan and parsley and combine.

Serve hot.

Baby Meatballs

1 lb ground beef
1 egg
1/2 cup oatmeal
1-1/2 cups kale

Heat oven to 400.

Pulse oatmeal and kale in food processor.

Place everything in small bowl and mix with hands.

Place golf size balls on foil lined baking sheet.

Bake for 25 minutes until cooked thoroughly.

You can serve them plain or with sauce.

I like these bc sometimes I make spicy food and I don't want Olivia to have that yet so I get a meatball out of the freezer and she can have that for dinner.

Crock Pot Buffalo Chicken

12 oz Frank's Red Hot Buffalo Wing Sauce
4 chicken breasts
1 packet dry ranch

In crock place chicken on bottom, sprinkle with ranch, and pour 3/4 jar of buffalo sauce. Cook on high for 3-4 hours. Remove chicken from crock and serve with remaining buffalo sauce.

We eat it on salads or sliders or quesadillas.
