Easter Dinner 2015

Our first attempt at lamb went pretty well. Broiling is really hard so next year we are grilling them. We had lamb loin chops, mashed potatoes, rolls, and sautéed Green beans with bacon, garlic, and Onion.

My family made me coleslaw too!

For dessert we had bunny cake.

We had wine with every course ;)

Sautéed Green Beans with Bacon, Garlic and Onion

2 - 12 oz bags french green beans, cooked
1 white onion, chopped
12 pieces bacon, crumbled
1 tsp cider vinegar
2 Tbsp brown sugar
1/2 tsp dried minced garlic
1/2 tsp garlic powder

Combine all in large skillet. Cook until onions are translucent.

Serve hot.

Easter Bunny Cake

Easter Lamb Loin Chops

1/4 white onion, chopped
3 garlic cloves, pressed
2 tsp dried Thyme
2 tsp dried Rosemary
1/2 dried cayenne pepper, chopped
1/2 cup olive oil

Combine and place in large zip lock bag.
Put 8 lamb loin chops in bag and let marinade over night.

Preheat to broil on oven. Lamb to room temp and remove larger pieces from meat. Season with salt and pepper. Broil each side for 2 mins, let rest 10 mins, and broil additional 4 mins.
