Mexican Casserole

I got this recipe from a friend of mine. She always has the best recipes that are easy and quick! I swear if I give her 5 ingredients she would come up with the best dinner! So here is the recipe she gave me to use up my pantry ingredients and leftovers for a Mexican theme.

Mix ground taco meat, 1 can of black beans and leftover salsa. Put on the bottom of a 9 X 13 baking dish. Add a layer of cheddar cheese. Next, prepare a box of cornbread mix (I used gluten free). Pour the cornbread mix on top of the cheese layer. Bake according to cornbread instructions (bake a little bit longer time than the box...I added 5 minutes and it was perfect).

This was so so good! I can't wait to have it again!!!
