Grilled Salmon with Avocado Salsa

This was the best BEST salmon I've ever had in my entire life! Also, I discovered my deep love for avocado salsa <3

I changed a few things for the salmon. I used regular chili powder and I grilled it on a bed of lemon.

For the Avocado Salsa I did...
1 avocado cut in cubes
10 grape tomatoes cut into quarters
1/4 of an onion chopped
2 Tbsp chopped cilantro
1 Tbsp lime juice

Mix and serve on to of salmon.

Allergy Blend

10 drops Peppermint
10 drops Lemon
10 drops Lavender
10 drops Copaiba
Fill remainder of 10 ml roller with frationated coconut oil.

Apply to neck, under nostrils, bridge of nose, behind ears and temples.

Nail Strengthener

10 drops lavender
15 drops lemon
15 drops geranium
7 drops rosemary

Combine in 15 ml bottle. Top with frationated coconut oil. Shake to combine. Apply to clean bare nails 3 times a week.

Healthy Lashes 101

1. Switch to organic mascara. This is physician formula organic black mascara. I bought it at target and it is on a low danger scale EWG page. Check out EWG and see the level of your current mascara. My previous one was a 6 and full of cancer causing agents!
2. Add one drop of young living cedarwood and lavender to promote growth and extends the life of your mascara.
3. Mix well.
4. Enjoy amazing lashes :)

Chalkboard Serving Tray

A friend of mine saw this on pinterest and we had to have one! So we rolled up our mom sleeves, painted, sanded, and screwed our way through 2" wood and BOOM, we are DIY goddesses!

Roasted Cornish Hens

2 whole Cornish hens
2 tablespoons olive oil
2 teaspoons garlic salt
2 teaspoons paprika
2 teaspoons rosemary leaves, crushed
1 teaspoon thyme leaves
½ teaspoon coarse grind black pepper

COOKING INSTRUCTIONS:
Preheat oven to 350°F. Place hens on a rack in a shallow roasting pan. Brush with oil. Mix all of the spices and herbs in a small bowl. Rub evenly over the entire surface of the hens. Roast in the oven for 1-1¼ hours, or until the hens are cooked through (an internal temperature of 165°F).

The flu entered our home a couple weeks ago. I diffused 3 drops purification and 5 drops thieves. It really helped ease our symptoms. The following day I diffused 4 drops of RC. It was a hallelujah I can breathe again moment!

DIY Air Freshener

6 drops orange
6 drops lime
6 drops lemon
6 drops grapefruit

Add water to top of a 4 ounce bottle.

I used what I already had in way of the bottle. Mine is 8 ounces I filled it half way with water.

I love this scent! So clean and fresh! Even better is it won't kill us with chemicals we breathe in either!

Homemade Shamrock Shake

This was amazing! My husband talks about shamrock shakes EVERY year. We haven't had them in about 3 years bc the fast food version makes us ridiculously sick!

I decided to make up my own recipe for dairy free and gluten free shamrock shakes because this year was my year!

I used 2 cups vanilla coconut milk ice cream, 1/4 tsp peppermint extract, 3/4 cup of unsweetened vanilla almond milk, and 2 drops of green food coloring. It's so easy! Put in a Ninja and boom your done!

This is delicious. My toddler and husband were very happy too!

Truth or Spoof: Essential Oil Scent Sachets

So I wanted to make an alternative to potpourri and Downey beads for my sachets. I don't like my family breathing in any potentially hazard fumes but I want my closets to smell non stuffy! So I turned to Pinterest to help solve my issue. I came across 2 great options that are both affordable. The question is, do both work? If yes, does one work better than the other? So I decided to do a Truth or Spoof on this. I put the rice in one closet and the cotton ball in one closet. In one week I will re-evaluate them and update this post.

RICE SACHET
1/4 cup of rice
4 drops peppermint
4 drops lemon
4 drops lavender
Combine in bowl and spoon into 2 sachets. Pull string to close tightly.

COTTON BALL SACHET
1 super large cotton ball
Place the following drops on cotton ball:
4 drops peppermint
4 drops lemon
4 drops lavender
Place cotton ball in sachets. Pull string to close tightly.

Addition to my Love of Gardening

I'm so excited that I finally got a Shamrock to add to my plant family! I've wanted one for years and I found one this year at a local store!

Irish Soda Bread with Potato Leek Soup

Happy St. Patrick's Day from a crazy Irish Lass! I always cook a traditional Irish dinner on St. Patrick's Day so this year I went the soup route. I found this dry mix at a local store and decided this was going to be it. I also found a gluten free recipe for Irish soda bread!

I used coconut cream in place of cream and omitted the bay leaf for the soup. I followed the soda bread recipe to a t and it was amazing!

This was the perfect dinner to celebrate my Irish roots 🍀

Lemon Meringue Pie

So I went on an adventure for Pi Day this week. I made my first meringue pie! It turned out wonderfully! This was my Grandma's FAVORITE pie. I truly believe she was here guiding me through this recipe. I used vegan butter so this was dairy free too!

Thank you to my friend, Kristen, for sharing this Chicken Pot Pie Casserole with me! Not only is it gluten free but we adjusted it to be dairy free too! (Cashew milk for cows milk. Cashew milk is better to use for casseroles bc it is savory and a little more thick than almond milk.) It was delicious and toddler approved! This is going to be a regular in our house <3

Headache Roller

10 drops Panaway
10 drops Peppermint
10 drops Lavender

Combine all in 10ml roller bottle and top with frationated coconut oil.

Apply to temples, forehead, neck, and under nostrils.

Sinus Roller

3 Peppermint
3 Eucalyptus
3 Tea Tree
4 Rosemary
2 Lavender
2 Geranium

Combine all in a 10ml roller bottle and top worth frationated coconut oil.

Apply to base of ears, sides of noise, cheek bones, under nostrils, and eye brow bones. Massage in.

This helps with my sinus pressure and colds.

Peace and Calming for Potty Training

Breaded Ranch Chicken

We marinated chicken in ranch for 24-48 hours. Then breaded it in gluten free bread crumbs. Baked at 400 until cooked through. We served it with spinach salad. Such a quick yummy meal that even my toddler loved!

Love Day Pizza

Olivia made me her first love day pizza! It was wroth these amazing spinach gluten free wraps as the crust. She was so excited to make pizza on love day like Daniel Tiger! I'm so blessed to be her Mommy!

Mermaid Hair

2-3 oz of alcohol free witch hazel
30 drops cedarwood
30 drops rosemary
30 drops lavender

Mix above in a 4 ounce glass spray bottle.  Top with distilled water. This is such a wonderful leave in conditioner and a great way to grow healthy hair!

I used my cricut to make the bottle applique. Just another of a million projects I have used it for!

TIP: add 1 drop off cedarwood and 1 drop off lavender to mascara for mermaid lashes!
