My hubby made this for me because eggplant was my new food to try in 2017. He made a few adjustments and suggestions.
Use 1/2 cup gluten free breadcrumbs and flour to reduce waste.
He used coconut oil for frying.
We never make our own sauce so we used Ragu.
Cut eggplant into 1/4" slices.
This was amazing! I can't wait to have it again! It's my third favorite recipe - behind toffee coffee and Cajun Alfredo.
