Hi all! I found this recipe as tweaked it. I really love its use of minimal ingredients and the fact that it is Beachbody portion control ready!
4 chicken breasts, fat removed
1 small red onion, sliced thinly
1/2 balsamic vinegar
28 oz can crushed tomatoes
Line crock pot with slow cooker bag and spray with non stick spray. Place chicken in bottom and season with garlic powder, pepper, oregano and basil. Top with onion, then balsamic, then crushed tomatoes. Cook on high for 4 hours, stirring at 2 hours and shredding chicken at 3.5 hours. Serve on top of quinoa!
